Hm, because I am lazy, I just take a stick of butter out of the fridge. Because this is hard to mix, I use an electric hand mixer. It seems to work. Setting it out beforehand to rise to room temp would probably work better. I have not tried melting it or using a different shortening, but this recipe is pretty forgiving.
